Osteria Volt
Wood fire, wine, and long tables
One hearth, a short menu that changes with the market, and rooms built for dinners that run long. Two dining rooms and a wine bar, one kitchen.

The rooms
Three rooms, one fire
The market call
The menu is an answer, not a plan
07:30 — the fish call. 07:40 — the produce call. 07:45 — the chef writes today's menu on the back of yesterday's.
Nothing is ordered before it is seen. That is why the hearth room does not publish next month's menu: next month's menu does not exist yet. What we can promise is what cooked well today, poured from a list of fifty glasses, in a room built for staying.
A service, from prep to last table
What happens before your plate lands
One service, four checkpoints, from the morning market call to the last table.
